Le Berthoud (typical Abondance cheese dish from Chablais)
| Ingredients - 600g (20 oz) of Abondance - 2 cloves of garlic - 1 pinch of nutmeg (optional) - 4 teaspoons white Savoy wine - 4 teaspoons Madeira - Pepper |

Method
Rub four ramekins with garlic and line them with thin slices of Abondance (150g/5 oz per person).
Drizzle the ramekins with the Madeira and white Savoy wine, then add a generous sprinkling of pepper.
Pop under the grill for 5 to 10 minutes until the crust is golden-brown.
Serve hot with bread and jacket potatoes.
Serve with a white Savoy wine.
